Although cleaning methods and materials may vary from chef to chef, the goal is universal: a clean and hygienic griddle that can cook effectively and delicious, unmodified food.

What do you need?

• Griddle scraper
• Griddle Brick/Pumice Stone
• Cooking oil
• Soda/Club Soda
• vinegar
• tattered

It usually takes 5-10 minutes to clean the grill properly.

Direction

• When the griddle is hot, pour 1 cup of cooking oil on the surface of the pan (you can use commercial griddle).

• Scrub the griddle surface of the griddle with bricks/pumice to make Miyagi-style small concentric circles until the surface is clean.

• Scrape the oil into the grease tank and discard it. Turn off the griddle.

• Pour (carefully) 1 cup of soda/soda water on a hot griddle. Carbonation helps loosen and lift stubborn grease.

• Use your griddle tiles/pumice stone to scrub the commercial griddle surface to form small concentric circles until the surface is clean. Scrape the remaining liquid into the tank and discard.

• Pour 1/2 cup of vinegar on the surface of the griddle, evenly sprinkle the liquid on the entire surface without allowing the vinegar to pool.

• Rub the surface of the griddle with a rag to form small concentric circles until the surface is polished.

• Scrape the vinegar into your oil tank and discard it.

• Wipe the surface with a cloth soaked in edible oil to polish and reseal the steel.

• Bathe in the warm glow of your newly cleaned griddle.

How often should I clean up the commercial griddle?

If your griddle is used a lot every day, we recommend cleaning it every day. This will prevent flavor transfer, loss of efficiency and invisible oil flake contamination.
