customized teppaniyaki table | Salmon “Burger” Patties

• 1 pound fresh salmon * (we love wild-caught redfish), skin and fat removed, cut into 1/2-inch pieces
* or any selection of fresh fish
• 2 tablespoons chopped fresh ginger
• chop 2 spring Onions
• 1 teaspoon salt + 1/2 tablespoon black pepper
• 2 eggs, beat
• 1 cup pumpernickei (Panko "or homemade)
• grapeseed oil or neutral vegetable oils, such as canola oil
• 4 hamburger buns, buttered and toasted

 

Citrus salad (forward)
• 1 cup chopped greens
• 1 cup chopped red cabbage
• 1 cup cucumber, peeled and seeded, thinly sliced, about 3/4-inch strips
• red bell pepper, seeded, thinly sliced, about 3/4 "strips

 

Salad dressing
• 3 tablespoons fresh lime juice
• 2 TBSP rice vinegar or Ponzu
• 2 TBSP. Soy sauce or tomato paste (instead of coconut oil)
• 1 TBSP sugar, TBSP salt and pepper to taste
Place all ingredients in a bowl and stir well. Sit still for at least an hour. Taste the acid and salt.

 

Curry mayonnaise
• 1/2 cup mayonnaise
• 1 teaspoon red or yellow Thai curry paste (instead of a mild curry paste)
• a beer of cayenne pepper or cayenne
• fresh zest 1 lime + juice 1/2 lime
• salt

 

Mayonnaise, curry paste, salt,
Cayenne pepper, lime peel and lime juice; Mix well.
Taste the acid and seasonings. Adjust the taste.

 

Salmon cake

Combine diced salmon with ginger, scallion, salt, pepper and egg in a mixing bowl. Stir well. Fold gently into the breadcrumbs and set the mixture aside. It will set when heated in teppanyaki.

Preheat teppanyaki table for sale commercial on top of 5.

On arrival (yellow lights out), bake bread with butter around the perimeter (butter down). Set the teppanaki table for garden temperature to # 7.5 to 8 (depending on the model). Gently set aside four hamburgers about an inch thick (with eight more sliders).

When the temperature is reached (turn out the yellow light), evenly cook the oil center (use a spatula) and cook a tablespoon of the salmon mixture for testing. Taste cooked test batches and adjust seasonings as needed.

Grill the burgers for about 2.5 minutes per side (medium to light) or until cooked. Close the customized teppaniyaki table.

Top the bottom bun with curry mayonnaise, top with salmon pie and dried-dry citrus salad (well done with tongs), top with the bun and enjoy!
