What is the difference between Hibachi and Teppanyaki?
Many people, especially in the United States, believe that Hibachi and teppanyaki are interchangeable. In fact, the two are different.
This is understandable why people are confused, because these two grills hold the concept of open and live barbecue.
However, there are a few key differences that make it easier for you to recognize.
Exterior
At first glance, it is easy to distinguish these two situations.
The Teppanyaki grill is square, large, and made of metal. It has a large solid surface where the chef can do the cooking process.
As mentioned earlier, Hibachi has a round shape or container made of cast iron. Some modern style Hibachi grills can also be square.
The outer layer is ceramic or wood to avoid burns to the chef. It has an open grate on the top, where chefs can cook.
Size
Teppanyaki is very big and people usually don’t put teppanyaki at home (although you have these great table teppanyaki plates for parties)
In restaurants, one stop of teppanyaki can entertain 10 people or more. You have to sit on a chair, and the table blends with the iron pot.
Burner
Hibachi uses charcoal to cook. Teppanyaki uses propane as fuel to make the flame burn under a flat surface.
These different methods result in different burnt flavors and colors on the dishes.
However, some modern units in Hibachi use electricity to generate heat to grill food.
Cooking Food
Since the surface is solid and flat, you can do anything on the teppan grill. Even vegetables and noodles are fine.
Such a thing is impossible for Hibachi. If you cut the food too small, the open grate will cause all the food to fall into the charcoal fire.
