So far, you've seen us mention clarified butter in some recipes. Sure, you can buy some products at health food or specialty markets or even online, but don't you want to make your own at home and know the quality of the butter you use? We think so!
To ensure optimum flavour, quality and health benefits, we recommend the use of grass-fed butter such as Kerrygold. Grass-fed butter is known to have higher levels of omega-3 and vitamin K2.
You don't need much time to make your own clarified butter; It's just a pan, 4-8 sticks of butter and a container. Yes, some people use cheesecloth to filter out the clarified parts of the separated solids. However, we think you will lose a lot of "liquid gold" and can do very well by pouring it slowly and slowly.
Place butter slices (thinly sliced or whole) in a pan and heat over medium-low heat. Allow the butter to start melting without any stirring or stirring.
After about 15-20 minutes, you'll start to see some bubbling. This part looks interesting, almost like fireworks in flames. Watch your temperature to make sure it's boiling, not boiling.
In a few minutes, you'll see a layer of white foam forming on top. You can use a slotted spoon to peel off the top layer to reveal the liquid pot underneath. You will notice that the solids have separated and will be at the bottom of the pan.
We kept the temperature low until about 40 minutes, when all the water had evaporated completely. At this point, we turn off the heat and let it cool down a little bit. We then carefully pour the clarified portion of the butter into our glass container to ensure that the solids do not pour out. Once you've mastered this, it's easier and cheaper to filter than cheesecloth.
You can store clarified butter at room temperature, but since we live in sunny southern Florida, we would like to refrigerate it. Clarified butter is our preferred cooking oil, which allows food to be cooked and browned without sticking or burning. You don't even have to melt a small piece on the Cookeryaki teppanyaki table or pan. If you want to reduce the amount of oil you use, just melt it and brush it.
