indoor teppanyaki table | Mary Ann's strawberry chicken
1.5 pounds boneless, skinless chicken breast or thigh (personal preference)
• 1 pound of fresh strawberries
• 2 bundles of scallions (scallions)
• 100ml chicken stock
• salt and freshly ground black pepper
• non-stick cooking sprays (e.g. Pam) or avocado oil, grapeseed oil, low erucic seed oil or clarified butter (ghee)
MARINADE
• 1 TBSP. Mustard seed
• 1 TBSP. Mustard seed
(available at fresh markets and specialty stores; Or yellow instead)
• 2 TBSP. Soy sauce (light or tamari is preferred)
• 2 TBSP. Sunflower, canola or grape seed oil
• 1 TBSP. Corn starch (substitute: corn flour, potato or rice starch)
Cut the chicken into grains, cut into inch-wide pieces. For the marinade, mix the soy, mustard seeds, cornstarch and oil with the chicken until each slice is nicely wrapped. Let cool and marinate for 30 minutes.
Meanwhile, wash and pat the spring Onions dry. Cut into 3/8 inch slanted pieces (at an Angle).
Wash, dry and clean (shelled) strawberries. Cut into thin slices, halves or quarters, depending on size.
Set the indoor teppanyaki with table cooking temperature to 5 for preheating. When the orange light goes off, set the dial to # 7 or # 8. On arrival (extinguish orange), wipe or spray the commercial table teppanyaki cooking center with grease, then scatter half the marinated chicken pieces to the cooking center so they don't touch each other. Cook for 2-3 minutes or until completely brown and set free. Turn everything brown. When almost cooked, move to teppenyaki table for sale external heated area and repeat with remaining chicken. Make sure the meat is not cooked in its own liquid. Don't overcrowd the cooking surface.
Stir-fry half the scallions for about 1 minute. Add the chicken stock and stir together. Add a little foam, season with salt and plenty of fresh ground pepper. Place all chicken pieces back in place until well combined. Close the teppanyaki table for backyard.
Now, add the prepared strawberries and the rest of the spring Onions, mix well with the chicken, and voila, you're ready to serve. Bon appetit!
