•1/4 cup sour cream or plain Greek yogurt
•2 tablespoons freshly squeezed lemon juice
• 1/4 teaspoon salt
With a fork, whisk together the sour cream, lime juice and salt until smooth. Transfer to a small bowl or individual mold and refrigerate.

 

QUESADILLAS
•4 8-inch flour tortillas (available at most grocery stores, but may be hidden in this area; Try smaller individual tortillas)
•1 ripe mango, peeled and thinly sliced
• serrano or 2 jalapeno peppers, seeded and diced
If you don't like spices, try dicing cucumbers
•2 scallions (scallions), cut into small pieces
•1/2 cup light packed fresh coriander leaves, chopped
• 8 ounces. Brie or camembert cheese, cut into as thin strips as possible
(refrigerators work best when they are very cold; Peeling optional)
Place the chopped peppers, scallions and cilantro in a bowl and set aside.
