What is a griddle?

The griddle is a bit like a hot plate, with a flat and smooth metal surface and heating supply directly below. The food is cooked directly on the plate.

They can be huge household use or small enough to hold a variety of food between burners. There are even working surface models for creating breakfast on the table, wherever there is a wall plug.

The griddle can even be a simple piece of iron or steel to match the fire or burner. The essential feature of a griddle is to maintain a level. Otherwise, the liquid will leak to at least one side of the grill.

The thicker the metal, the higher the heat retention and cooking quality. In addition, the agent metal can make the cooking surface of the griddle uneven, which may not be ideal for barbecue lovers.

What is a grill?

You will notice two styles of grills. One is a cast iron grill or flat grill with space, the difference is a bar where food is placed directly on an open flame.

Open barbecue grills are what you see on most barbecue grills. The solid grill has a continuous row of ridges that transfer heat to the food while allowing fat to flow between them.

Grilled food has those delicious, few grill marks from the ridge or bar. Extreme heat can cause food to turn yellow or black where it touches metal.

Browning is called Maillard reaction and is caused by the caramelization of sugar due to elevated temperature.

The grill provides a lot of warmth and smoke, and is only used outdoors or under the poster mechanical system (also called a chimney) to pull the smoke outside.

Smokers cook at a lower temperature than a grill or griddle. However, the grate is open to allow smoke to flow in, so juice drips from the meat.
