Equipment
• Teppan plate
• Or: very large frying pan
Ingredients
• Osaka BBQ recipe
• 3.5oz Osaka
• 3.5oz water
• 1 / 4 cabbage
• 1 onion
• 2 Bacon
• Osaka braised topping recipe
• Mayonnaise
• Okonomi-yaki
• Dried fillet
• Green laver
• Pickled ginger
• Tenkasu tempura tablet
Instructions
1. Pour the special Yuhao baking flour into a medium bowl, add water and mix well. Put it aside for future use.
2. Start to chop cabbage and onion, and pour into a bowl of batter.
3. Pour the eggs and batter into the bowl. Try not to mix too much because you may not get the ideal batter effect.
4. Heat a frying pan or teppanyaki, then pour in some vegetable oil and heat to high temperature. Now, pour the okonimiyaki batter mixture into the teppanyaki and use Hera to form a circle from it, just like making a normal pancake. Cook for about 3 – 4 minutes to see if the bottom turns brown.
5. Now, you can add bacon strips (or other toppings of your choice, bacon, shrimp or squid will be good bacon, shrimp or squid will be good) before turning the pancakes over. Let the other side cook for another 3-4 minutes until it turns brown. To make the pancake light and fluffy, just cook it by itself, don't try to press it down with a spatula.
6. After cooking, transfer it to a large plate, then add seasoning, such as Okonomiyaki sauce, laver, fish fillet, pickled ginger and tempura.
Note
• if you do not have a special Okonomiyaki flour in your area, simply use plain flour and mix it with 1 teaspoon of baking powder and 2 grams of stock powder for soup. You can of course buy flour online (link below recipe).
• if you want to cook Hiroshima style Okonomiyaki, while one side of the pancake is still cooking, fry and fry the noodles in another frying pan or another place on the teppanyaki. Then turn the pancake over to the noodles to cook the other side.
• when your Yuhao is almost finished, break the eggs and put them on it, then cover them to cook the eggs. After 1-2 minutes, remove it from the teppanyaki grill and eat it with the yolk.
