It adds to the Japanese Hibachi flavor that I am used to in restaurants. Its consistency is also thicker than other oils. A little bit will do. We want to use it sparingly, so it must be my size. If you can't find sesame oil, don't worry. Without it, the taste will be good. Of course, vegetable oil is used to coat the cooking surface to prevent stickiness and burning.
Speaking of fried rice, I like to cook the rice in the refrigerator the day before cooking. However, the requirements for Hibachi rice are lower. However, you never want to cook the rice and use it for this type of recipe right away. I like to cook the rice for a few hours before using it to let it cool. This prevents it from becoming mushy and overcooked. I only use eggs and sweet onions in my Japanese Hibachi rice, because this is my favorite, local Japanese restaurant practice. However, you can add peas and carrots at will.
