2 samples of monjayaki recipes
Today, we're going to talk about two of the most seasoned Japanese recipes, which, in terms of ingredients, happens to be as well known globally as any other Japanese cuisine - Okonomiyaki and its evolving version of monjayaki.
Okonomiyaki is a unique recipe developed in Kansai or Hiroshima of Japan, but now it has become a national family food.
On the other hand, monjayaki is a kind of fried batter, which originated in Guandong area.
Monjayaki Recipe 1
Ingredients
• 500 ml water
• 3 tbsp. flour
• 4 tbsp. worcestershire sauce
• 300 g (10.6 oz) cabbage
• 10 g (0.36 oz) sakuraebi (dried shrimp)
• 50g (1.8 oz) tenkasu (crisp fried flour paste)
• ((you can add other ingredients))
• pickles, flavored cod roe, cheese, corn, tuna, rice cake, noodles, snacks, etc
For Batters:
• 1 cup of water
• 1 / 2 cup Worcestershire sauce
• 3 / 4 cup flour
Cooking Direction
1.) in a medium bowl, add flour, water and Worcestershire sauce. Mix well until flour dissolves.
2.) open the teppanyaki griddle, set the temperature to medium high, and then pour the oil on it.
3.) put the chopped cabbage and other ingredients in a small bowl.
4.) this time, pour the cabbage mixture into the grill, round it, and start frying.
5.) remove some cabbage mixture from the center and push it sideways to form a doughnut shape.
6.) pour the batter into the center of the coleslaw mixture that was just perforated, then mix and chop it when cooking.
7.) continue to pour in the remaining batter and other ingredients until they are all used up, continue to chop and stir macaroni until it looks sticky. Cook for up to 5 minutes, then heat immediately on the grill.
Monjayaki Recipe 2
Ingredients
• 75 g Diced Pork
• 1 / 8 cabbage
• 3 pieces mochi rice cakes
• 150g frozen corn
• 30g pizza
• 1 teaspoon curry powder
• Dashi soup 400ml
• Japanese Worcester sauce 50ml
• 100 ml flour
• 1 cup of Worcester sauce
• 1 cup of water
Cooking Direction
1.) to make a monjayaki batter, mix the flour, Dashi soup and Worcester sauce in a medium bowl.
2.) chop the cabbage.
3.) cut the pork into 2cm pieces.
4.) sprinkle vegetable oil on the teppanyaki grill and heat it when frying pork.
5) Check if the pork turns brown, then put it in the cabbage and continue to cook.
6.) dig a hole in the middle of the pork and cabbage and dig a circle.
7.) pour the batter mixture into the center hole you just made, then mix it with Heras (two spatula spoons) and chop it, then repeat the process until all batter is used up.
8.) add rice cake and corn, then stir.
9.) mix until Machi melts.
10.) if you find that the rice cake melts, add curry powder and cheese to complete the recipe, then mix and chop for about 2 to 3 minutes.
11.) put hot food on the grill.
